Fried rice is the most common Asian meal that we keep making at home. It is easy to make by just cooking rice with vegetables like carrots, capsicums and French beans. Seasoning of soya sauce and vinegar makes it an appetising meal. Regular fried rice is a no-fuss recipe and is made pretty much the same in all households. But, Korean egg fried rice is a tad different and highlights the flavour of eggs (a lot of eggs) in its simple recipe that uses no spices. Why? Because egg is the hero here.
Korean egg fried rice is a famous street food in Korea and also a breakfast staple there. But, you can make this meal for lunch or dinner as well. Once you’ll try this recipe, you’ll realise how easy it is to make.

Korean Egg Fried Rice Recipe
(Serving – 2)
Ingredients –
6 eggs
3 cups boiled/cooked rice
Half cup grated carrots
Half cup beans, chopped
Half capsicum, finely chopped
Salt to taste
Oil for frying
1 tbsp vinegar
Method –
Step 1 – Cook rice in advance by boiling soaked rice in water and then drain off the water.
Step 2 – Heat oil in a deep-bottom vessel (kadhai). Crack 4 eggs one by one and carefully toss in the oil without breaking the yolk. Let the eggs cook for a minute. Then stir and scramble the eggs till they are fried properly. Add grated carrots, chopped beans and chopped capsicum. Add salt to taste and fry the vegetables till they are cooked.
Step 3 – Add rice and saute the rice well along with egg and veggies for about 10 minutes.
Step 4 – While the rice is cooking, boil some water in a pan. Add vinegar and some salt. Crack 2 eggs separately in a ladle and gently toss them in boiling water to poach them. Here are few tips on how to poach eggs perfectly. It should take only 2 minutes to cook egg white; the yolk should be runny.
Step 5 – Place the poached eggs on fried rice and serve.
