We just can’t seem to have enough of eggs, especially for breakfast. Easily accessible and easier to make, eggs are our go-to food for the kick of proteins and good taste to start our day with. Apart from boiled eggs, an omelette is the most common eggs recipe all over the world that makes for a satiating meal. It gives us room to experiment by adding veggies like onions, tomatoes and spices like green chillies. In our attempt to make things even more interesting, we added paneer to our omelette, and it turned out to be so good, it left us wondering why we didn’t think of this before.
Paneer (or cottage cheese) is another protein-rich food that we love to eat for breakfast, lunch, dinner, and even for snacks. The double bonanza of proteins makes this omelette with both eggs and paneer, a must-try. Grated paneer is added to the omelette to make it creamier, cheesier and softer.

Step-By-Step Paneer Omelette Recipe:
Ingredients:
3 eggs
Half cup paneer, grated
4-5 tbsp milk
1 onion, chopped
1 tomato, chopped
2-3 garlic cloves, chopped
1 tsp ginger, grated
Salt to taste
Black pepper powder to taste
Half tsp red chilli flakes
1 tsp mixed herbs or oregano
Half tsp garam masala powder
1 tbsp coriander leaves, chopped
1 tbsp mozzarella cheese, grated (optional)
Method:
Step 1 – Crack the eggs in a mixing bowl. milk, salt, black pepper powder and garam masala, and whisk again.
Step 2 – Add grated paneer and coriander leaves to the whisked eggs.
Step 3 – Heat oil or butter in a pan, saute onions and garlic till brown in colour. Add tomatoes, oregano or mixed herbs, some red chilli flakes and cook till tomatoes wilt.
Step 4 – Add the egg batter and spread it all over the onion-tomato mixture.
Step 5 – Cover the pan, turn down the flame, and let the omelette cook from all the sides evenly. When the omelette cooks from the bottom, you can flip it once if you feel the top is not cooked.
That’s it. Your cheesy omelette is ready! Sprinkle some grated cheese if you like it. If you use a smaller pan to make this recipe, you’ll get a thick cake of omelette, which you can cut into pieces to serve. Enjoy this unique omelette with tomato sauce or chutney.
