Diwali is just around the corner, and there is something about this festive period that makes us want to throw all our diet plans out of the window. Diwali is an excellent to time to indulge in some desi sweets and snacks. Barfi, namak pare, dry fruits, chakli are all festive snacks we have grown up with. The markets are filled with them, but this year, we have taken the plunge to make some of them at home. Yes, since the festivities are not quite the same this year, making our own Diwali snacks and sweets may just make the celebrations a tad more memorable in 2020.
One of the most common Diwali snack is a mathri or matthi. This North Indian snack is essentially a crispy, savoury biscuit, often flavoured with spices like cumin(jeera) or carom (ajwain) seeds. We love mathri as it helps break the monotony set by sweets. Diwali is indeed a festival of sweets, but sometimes you need some savoury additions to save the day. Mix maida with ajwain seeds, salt, black pepper powder, ghee and combine. Combine until it starts to bind. Do not add too much ghee, as it may break while frying. And if you put less ghee, your mathris may become slightly harder in texture. Make a semi tight maida dough, coat with oil on either side. Roll the flat cut in desired shapes and fry.
