Pachmel dal is a Rajasthani specialty made with a splendid blend of arhar dal, chana dal, dhuli urad dal, moon dal (chilkewali) and dhuli moong dal. What makes this dal stand apart is the addition of some sweetness from a dash of sugar and fennel seeds that compliments the other Indian spices perfectly.

Cooked generously in desi ghee, pachmel dal is perfect for those times when you want to make a special meal for your family or for guests coming over. It is relatively easy to make too. Unlike other dal preparations, you have to cook all the dals together all the way through till you get a thin pouring consistency. Sugar is also added along with salt and turmeric to cook the dals.
A rich tempering of ghee is made with a range of spices, including onions seeds, fenugreek seeds, fennel seeds, cumin seeds, coriander powder, mango powder, ginger and hing. Add the cooked dals to it and simmer for some time before serving it with the garnishing of coriander leaves.
