Diabetics are advised to be extra cautious about their diet. The foods they eat have a direct impact on glucose production and blood sugar level. There are many foods around us that are good for diabetics and methi (fenugreek leaves) is one of them. Consultant nutritionist Rupali Datta reveals, “Fenugreek is advised to diabetes patients as it has many properties making it one of the diabetes-friendly foods.” Methi is rich in vitamin A, vitamin C, potassium, calcium and iron. The presence of a particular kind of amino acid in methi makes it a prized part of a diabetes diet.

There are many ways to include methi in a diabetes diet. This methi-moong dal khichdi is one of the good options. Protein-rich, low-calorie moong dal is also a good food for diabetes. Also, we are using healthier brown rice instead of white rice to make this khichdi.

Methi-Moong Dal Khichdi Recipe:

Ingredients

1 cup methi leaves
Half cup brown rice
Half cup moong dal
2 green chillies
1 tsp cumin seeds
A pinch of hing
Salt to taste
Red chilli powder to taste
1 tsp grated ginger
1 tsp grated garlic
1 tsp garam masala powder
Ghee for cooking
Coriander leaves for garnishing

Method

Step 1 – Soak dal and rice in water for at least 20 minutes.

Step 2 – Soak spinach leaves in warm water for 15 minutes to clean them thoroughly.

Step 3 – In a pressure cooker, heat some ghee. Add cumin seeds and hing, and let them crackle. Add chopped green chillies, ginger and garlic and saute for a minute. 

Step 4 – Drain and wash methi leaves, and add to the cooker. Also add salt, red chilli powder, mix everything well. Cook for about 2-3 minutes.

Step 5 – Add rice and dal along with the water they were soaked in. Close the lid and cook for about 15 minutes (2-3 whistles).

Step 6 – Open the pressure cooker after the steam is gone. Add garam masala powder and fresh coriander leaves. Serve with a dollop of ghee or butter. For best taste, pair the yummy khichdi with a pickle of your choice or curd. Enjoy!
