Sukhdi (Gur-Papdi) Recipe: This Gujarati Staple Snack Is Just The Winter Delicacy To Chomp On


Winter is all about indulgence. It is that time of the year when we just simply indulge, keeping the weight-gain worries aside. Kitchen pantries, during the winters, are stacked with several yummy sweet and savoury foods that you just can’t resist. One of the main factors that lead to excessive eating is the extensive spread of winter delicacies available everywhere. We all will probably agree to the fact that controlling your cravings in this situation is not an easy job. From gajjak and rewri to ghee-laden halwa and parathas – the list of these seasonal treats go long.

Here’s one such lip-smacking sweet treat that can not only warm you up from within in this cold weather, but also be a great addition to your list of sweet-treats. It’s a Gujarati staple snack called sukhdi (or gur-papdi/gor-papdi). Sukhdi is basically a delicious mix of equal amount of atta and jaggery and oodles of ghee, set and cut in diamond and square shapes and eaten like biscuits.

Available in almost every Gujarati household, this quick and simple snack also has a high nutritional value. While jaggery helps you keep warm during winters, ghee helps boost immunity and prevent seasonal diseases. Gur-papdi often includes different types of nuts that make the snack yet more nutritious.

Here’s The Recipe Of Gujarati Sukhdi (Gur-Papdi/Gor-Papdi):

Ingredients:

1 cup atta

1 cup jaggery, grated

Half cup ghee

1 teaspoon cardamom powder (optional)

Method:

Step 1. Add ghee in a pan and let it melt. Keep the gas stove on medium to low flame throughout the process.

Step 2. Add atta and roast till it turns golden and releases a nutty aroma. Keep stirring continuously to avoid the atta getting burnt.

Step 3. Switch of the flame and add cardamom powder and let it cool a bit.

Step 4. Add grated jaggery and mix with the atta. Keep stiring till the jaggery melts.

Step 5. Grease a plate and transfer the atta-jaggery mix to it. Spread evenly. In this step, you may sprinkle some roasted, chopped nuts on the mix (optional).

Step 6. Let it cool completely and then cut into square/diamond shaped-papdis and serve.

You can also store it for few days in an air-tight container.
