Another admirable quality about soups is that they are so versatile, you can make them with veggies, meats, herbs, dumplings, noodles, and they will always taste delicious, more so on a nippy evening. Which is perhaps why there are so many different kinds of soup preparations in the Himalayan cuisine; one such delicacy is thukpa.

Most of us have tried thukpa at some point; the luckier ones have tried it amid the mountains. But for those who haven’t heard of the dish, thukpa is a soothing noodle soup, made with a bunch of spices, veggies and meat.

The consistency of the broth is clear; it is not thick, curry- or gravy-like. While the soup uses many hot spices, it also has a certain acidity that makes it so balanced and wholesome. The boiled noodles have their own charm. There is enough room to experiment with thukpa. You can add any veggies or meat of your choice to make it richer. This Ladakhi chicken thukpa uses the goodness of chicken legs, ginger, carrots, green chillies, soy sauce, lemon, spring onions, coriander leaves, garlic and olive oil. The recipe also uses egg noodles; you can use regular noodles if you want. You can also play around with consistency, if you want it thinner, you can add more water to the soup. This super simple recipe is ideal for this weather, and so incredibly easy to make at home.
